Fresh Apple Cake with Warm Butter Sauce


4 cups coarsely chopped apples (cubed) figure approx 1 apple per cup but you might need to buy a couple extra for snacking and to make sure you have enough

2 c. sugar

2 eggs

1/2 c. vegetable oil

2 tsp. vanilla

2 c. sifted flour (are you kidding, who sifts anymore - just make sure it's not packed into the measuring cup)

2 tsp. soda

2 tsp. cinnamon

1 tsp. sat

1 c. chopped nuts (optional but I love the contrasting texture) raisins are great in here too!


Combine apples and sugar, let stand. Beat eggs slightly, add oil and vanilla. Mix dry ingredients. Stir in alternately with apple-sugar mixture. Stir in nuts. Pour in greased 9x13 or bundt pan. Bake at 350 degrees for one hour.

Make it Gluten Free: Switch to 2 cups ATK gluten free flour blend and add 1 tsp. Xantham Gum. Let the batter rest 15-30 minutes for the flour to absorb the liquid, then bake at 350 for 1 hour. 


Beyond Heavenly when served with Warm Butter Sauce (aka Buttermilk Syrup). Don't have buttermilk?
an alternative Butter Sauce:
1 cube butter
1/2 cup sugar
1/2 cup water
1 heaping T. cornstarch or 3 T. flour
Bring to boil, and cook for 5 minutes, stirring constantly.

DANGEROUS CHOCOLATE CAKE-IN-A-MUG***

From My sister, Vicki - Wouldn't this be a great teacher gift!?! What a fun treat to send the dry stuff tied to the handle of the mug in a cute baggy, and have the other stuff in a separate bag inside the mug (or all in separate little containers in a basket. I would have loved that when I was teaching! Hello LUNCH!!!

1 coffee mug
4 Tbsp. cake flour (plain, not self-rising)
4 Tbsp. sugar
2 Tbsp. cocoa
1 egg
3 Tbsp. milk
3 Tbsp. oil
Small splash of vanilla
3 Tbsp. chocolate chips, optional

Add dry ingredients to mug, mix well with a fork. Add egg, mix thoroughly. Pour in milk and oil and vanilla, mix well. Add chips, if using. Put mug in microwave, and cook for three minutes on 1000 watts. Cake will rise over top of mug--do not be alarmed!Allow to cool a little; tip onto a plate if desired. Eat!

(This can serve two if you want to feel slightly more virtuous.)

***And WHY is this the most dangerous cake recipe in the world?

Because now we are all only five minutes away from chocolate cake any time of the day or night!!!***
* Edit * Ok. I tried it. Hmmm, not the best cake I've ever eaten: a little rubbery (perhaps because it was microwaved) and pretty chocolatey. However, I think the goal of it is being accomplished. What we ask of it is a quick chocolatey-baked-good fix. There was nothing wrong with it that a scoop of ice cream and a little hot fudge couldn't fix! I think the recipe needs some tweaking, so I will make the sacrifice and try again tomorrow. I'll let you all know how it goes. (Definitely enough for two.)

Chocolate Cake (Made with Mayonnaise)
2 cups flour
1 cup sugar
2 teaspoons baking soda
1/2 cup cocoa
1/4 teaspoon salt
1 cup mayonnaise
1 cup cold water
1 teaspoon vanilla

Combine all ingredients, mixing well. Bake in two greased eight or nine inch cake layer pans in oven preheated to 350 degrees Fahrenheit about 30 minutes or until wooden pick inserted in center comes out clean.

(I just bought a cookbook that was published in 1948 by the Westminster Presbyterian Church in Topeka, KS. The recipes are in the handwriting of the contributors and signed. There are a disconcerting number of recipes for canning. This magazine clipping was inside the book. Love it!)

Texas Sheet Cake or Hot Fudge Cake (Julie's Favorite!)

1/2 cup margarine

1/2 cup shortening

4 Tbsp. cocoa

1 cup water

2 cups sugar

2 cups flour

1/2 cup buttermilk (or sour milk - add about 1 tablespoon of vinegar and let it set about 10 minutes it will curdle)

1 tsp. baking soda

1/2 tsp. salt

2 eggs

1 1/2 tsp vanilla


Combine margarine, shortening, cocoa, water and bring to a rolling boil. Sift together sugar and flour. Combine hot liquid mixture with dry. Mix well. Combine buttermilk, soda, and salt and stir well. Add this to the hot mixture. Beat the eggs slightly, add them in, then add the vanilla. Bake in a jelly roll pan, about 3o minutes at 325 degrees.


Fudge Icing:


Mix together and bring to a boil:


1 stick margarine

4 Tbsp. milk

4 Tbsp. cocoa


Remove from heat. Add 1 box sifted powdered sugar. Beat until creamy. Stir in 1 teaspoon vanilla. Pour over hot cake! Can sprinkle with chopped walnuts or pecans!

Hotmama's Famous Award-Winning Cornbread
The SECRET recipe, please follow carefully:

1 box yellow cake mix

2 of those tiny Jiffy Mix Cornbread Mixes

and whatever stuff it calls for on the boxes

to make the cornbread and cake

(water, milk, eggs, oil)

Mix them all together in one big bowl.

Bake it at whatever temperature it says on the boxes (if they say different temps, then I shoot for somewhere in between),

for whatever time it says is appropriate for your pan

(but I usually check it 5 minutes early with a toothpick.)

Obviously this recipe was developed using exacting scientific laboratory standards and I cannot guarantee your results at home.

Brigham's Buttermilk Doughnuts
2 c. buttermilk
1 c. sugar
2 tsp. soda
1 tsp. salt
1/4 c. melted butter or shortening
2 large eggs
5 c. flour
1 tsp baking powder
1 tsp. grated nutmeg

Combine buttermilk, eggs and sugar and blend well. Beat in sifted dry ingredients, then stir in melted butter. Roll or pat dough on floured board about 1/4 inch thick and cut with 2 1/2 inch doughnut cutter. Fry in hot fat (375 degrees) until golden brown on both sides. Drain and sprinkle with sugar. Makes 2 dozen.

Fruit Cocktail Cake
2 c. flour
2 c. sugar
2 t. soda
2 t. salt
Add 1 large can fruit cocktail, well drained.
Add 2 eggs and mix.

Put in 9x13 pan. On top of batter, sprinkle a cup of brwon sugar and 1 cup nuts.
Bake at 350 degrees for 40 -45 minutes.
Top with Whipped Cream when served.

Chocolate Leaves

Cut and wash lemon leaves. Dry completely. Melt 1/4 package Wilton Candy Melts according to package directions (really it doesn't take very much, and you can always melt more if you need them). Using a cheap plastic paintbrush, paint the back of each leaf, fairly thick, with the melted chocolate. (You can also use the back of a spoon or try to dip carefully, you don't want it on the front of the leaf or it's harder to get them off). Allow to cool. Carefully peel the leaf off of the chocolate.

Brown Sugar-Cinnamon Cream Cheese
1 (8 oz.) package cream cheese, softened
3 T. brown sugar
1 tsp. cinnamon
1 T. milk

Mix well. Use on bagels, as a cake filling, as a fruit dip, or for anything else that you crave when you read the recipe!

Janie's Dark Chocolate Ganoche
In a double-boiler pour 1 (12 oz. bag semi-sweet chocolate chips) and 1 pint cream. Allow to melt, then stir well. Remove from heat. Mix in 2 cups powdered sugar. Frost cooled cake immediately. Will cover and fill a 9 inch, two-layer cake, with some leftover to eat by the spoonful or on vanilla wafers/graham crackers/saltines...

Refrigerate until serving; bring to room temperature 30 minutes before serving.

White Chocolate & Cream Cheese Frosting


1 (12 oz.) package Wilton White Candy Melts or any white confectionery coating
2 (8 oz.) packages cream cheese, softened
1/4 c. cream
2 c. powdered sugar

Melt candy melts according to package directions. Allow coating to cool slightly, stirring occasionally (don't let it harden). In a mixing bowl, beat the cream cheese until smooth and creamy. Gradually beat in the cooled coating until blended and smooth. Beat in the cream and powdered sugar.

Enough to fill and frost a 9 inch, two-layer cake. Refrigerate until ready to serve. Bring to room temperature 30 minutes before serving. Makes 12-14 servings.

Carrie's Breakfast Cake
from Carrie Keiser

Cream:
1/2 Cup Butter (I've used shortening and it still tastes good)
1 Cup brown sugar
2 eggs (According to my mom and 2 of my brothers the eggs are optional. I have never made it with out, but they swear they have never made it with them!)

Blend in:
1 Cup milk

Add:
2 3/4 Cups flour
3 teaspoons baking powder
1 teaspoon salt

Mix well and spread in 9x13 cake pan. Batter is thick.

Topping:
1/2 Cup sugar
1/2 Cup flour
1 Tablespoon cinnamon
1/4 Cup butter (no subbing)

Blend with a "muncher", or a fork or cut with2 knives, whatever you have!
Sprinkle over the cake and bake @ 375 for 25 mins. wonderful alone or with a bowl of oatmeal. Works for dinner too! :)

Emmanuelle's Chocolate Pear Cake
Fondant coco poires

- 4 eggs
- 150g sugar
- 2 vanilla sugar bag
- 1 big spoon of rhum
- 20 cl fluid fresh cream
- 125g flour
- 1/2 yeast bag
- can pears
- 75g of butter
- 75g of powdered coconut
- dark chocolate (about 1/2 block, about 100g)

Whip 2 eggs with 100g of sugar. Put vanilla sugar, rhum, cream, flour, and yeast. Mix with little peace of pear. Pour down the mix in your cake pan.

Preheat your oven to 150°C.

Dissolved dark chocolat with a little bit of water in the microway. It must be not too fluid. Then put it all over the 1st mix.

Whip 2 eggs with 50g of sugar, melted butter, and coconut.
Cover with that mix the 1st mix(with pear)

Bake about 45 min (the cake must be glazed above)

Fresh Apple Cake
Pare apples and dice to make 4 cups.
Pour 2 cups sugar over apples in large bowl and add 2 beaten eggs.
Let stand for 1 hour.

Then add the following ingredients, mixing well:
1/2 c. oil
2 c. flour
2 tsp. baking soda
1/2 tsp. salt
2 tsp. cinnamon
2 tsp. vanilla
1 c. chopped walnuts

Bake at 350 degrees for 45 minutes in a greased and floured 13 x 9 x 2 inch pan.

It's even better served with Butter Sauce:
1 cube butter (1/2 cup)
1/2 cup sugar
1/2 c. cold water
1 heaping T. cornstarch

In a saucepan, melt butter, add sugar, mix together water & cornstarch, then add to butter/sugar. Bring to a boil, stirring constantly, boil 1 minute. Pour over each piece of Apple cake as it's served.

Fruit Cake

I admit it, I love Fruit Cake! Somewhere along the line in my childhood, I learned to love fruit cake. Probably from the year that my mom made dozens and took them to all the neighbors when I was around 8. I try to make one every year. This year I ate about half of it myself. Porter (3) would see me eating something good and beg for a bite, so I'd give him one. Everytime he would make a face and spit it in the trash! After 5 or 6 times, he started looking closer at what I was eating and he quit asking me for a bite. LOL!


Here's my favorite recipe, straight off the None Such Mincemeat Jar - anything else and you're just wasting money and taking your chances, as far as I'm concerned.


2 1/2 cups all-purpose flour

1 tsp baking soda

2 eggs, slightly beaten

1 (27 oz) jar NoneSuch ready-to-use Mincemeat

1 (14 oz) can Eagle Brand Sweetened Condensed Milk (not evaporated milk)

2 cups (1 pound) mixed candied fruit

1 cup coarsly chopped nuts


Preheat oven to 300 degrees F. Grease and flour a 10 inch bundt pan. Combine flour and baking soda, set aside. In a large bowl, combine remaining ingredients; blend in dry ingredients. Pour batter into prepared pan. Bake 1 hour and 45 to 50 minutes (that's almost 2 hours!) or until toothpick inserted comes out clean. Cool 15 minutes. Turn out of pan. Garnish as desired.
