Chandra Hansen’s Pine Summit Mac & Cheese (for a crowd)

Serves 40 people (amounts in parenthesis are what the package size is – can reduce amounts for convenience, serves 30+)
Margarine ½ lb = 2 sticks or 1 cup
Flour 1 cup
Salt 2 tsp.
Pepper 1 tsp. = 40 grinds fresh
Garlic Salt 1 tsp.
Seasoned Salt 1 tsp.
Milk 10 cups (8 cups)
Velveeta 2 ½ lbs (2 lb)

Macaroni 2 ½ lbs (2 lbs) - cook 3 minutes less than directions on package

Melt margarine, whisk in flour to make a roux, whisk in milk, add salts and pepper, cubed velveeta cheese
Melt and mix it in. It will be runny. Pour over cooked pasta (cook 3 min less than directions). Bake covered 32-40 minutes in 350 degree oven.
Can cover with crumbs or crushed potato chips (uncover and brown at end).

Great for a potluck, girl's camp, or big family party!

Chicken & Rice Casserole
In greased large casserole, pour 2 cups white rice, add thawed and lightly browned in butter, chicken breasts. Cover with Family Size can of Cream of Chicken or Cream of Mushroom soup, plus 1 four cup box of Chicken Broth. Cover and Bake in 350 degree oven for 1 hour. Love it with Green Beans and Rhodes Rolls.

Turkey Pot Pie
Preheat oven to 400 degrees F. Thaw two deep dish pie crusts and poke with fork. Bake pie crusts as directed on package for 1 crust pie.

While they're baking, mix:

1 2/3 cups hot water
1 package (6 oz.) Stove Top Stuffing Mix
3 T. butter or margarine
(can add sauteed minced onion and celery too - yum!)

Stir just until moistened. Set aside.

Combine:
4 cups chopped cooked turkey
1 bag (16 oz.) frozen mixed veggies or broccoli
1 can (10 3/4 oz) condensed Cream of Chicken or Cream of Mushroom soup (you can just use leftover gravy too)
3/4 cup milk
1 1/2 cups shredded cheddar cheese (with mushroom or gravy, I leave out the cheese)

Pour Turkey/Veggie mixture into pie crusts, top with stuffing. Turn oven down to 350, and bake 30 minutes or until heated through.

Soooooo delicious - the kids could not get enough of it and had the leftovers for breakfast!

*If you don't have pie crusts, or want to save some calories, just spray a 9x13" casserole and pour the turkey mix in, then top with stuffing mix and bake 30 min at 350.


To Freeze ahead for Once a Month Cooking: prepare soup/turkey/veggie mix. Freeze in two Ziploc containers or 1 gallon freezer bags with the package of frozen pie crusts. Be sure to have your box of dressing in the pantry. On the day of serving, thaw turkey mix in fridge or microwave to soften, and continue as directed.

Oh, I just realized that a layer of mashed potatoes, turkey, layer of cheese, layer of veggies, layer of gravy/soup, layer of stuffing...then bake, would be just heavenly. (Is the word layer starting to look weird to you too?) Yeah, I don't generally love shepherd's pie, but still...it's all about the contents and proportions. Right?

Red Hamburger Enchiladas
Fry 1 package corn tortillas in hot oil for about 15 seconds on each side (enough to soften, not fry crisp) - set aside.

Saute 1minced onion in 1 T. oil, add 1 lb. ground beef, brown, rinse and season with salt and pepper.

In each tortilla roll a couple of tablespoons ground beef, and some grated cheddar or jack cheese. Place side by side in sprayed (with Pam or something) 9x13 pan. (You can cover and freeze or refrigerate at this point, if you are making ahead.)

When ready to serve, cover with Red Enchilada Sauce, cover and bake in 350 degree oven for 20 minutes (if frozen, it may take an hour) or sauce is bubbly and cheese is melted, uncover, sprinkle with grated cheese, bake just until cheese is melted and serve.

Great with refried beans or pinto beans, pico de gallo sauce, shredded lettuce, minced onions, and sour cream. My grandma used to always serve scrambled eggs with enchiladas. We also love them with Pork and Beans.

Au Gratin Potatoes
7-8 medium potatoes, boiled, peeled and diced (red potatoes are best, don't overcook!)

Mix all together and add potatoes to:
1 pt. sour cream
2 cans cream of chicken soup
1 1/2 cup cheese, grated
1/2 cup margarine, melted

Topping:
1/3 cup cornflake crumbs
2 Tbsp. melted butter
mix and sprinkle on top of potatoes.

Bake at 350 for 45 minutes.

Scalloped Potatoes
5-6 white potatoes
1 can cream of chicken soup
1 1/2 cup sharp cheddar
garlic salt and pepper
1/4 cup melted butter
1 pt. sour cream
1/2 c. chopped green onion

Cook (boil) and then quarter potatoes, peel and cut up. Mix together remaining ingredients and put in casserole dish. Bake at 350 for 45 minutes to 1 hour.

Chicken Pot Pie
2 rolls refrigerator pizza crust

Bake together:
3 large chicken breasts
1 Family size cream of mushroom soup
1 cup milk

Dice, steam, & season:
4 potatoes
1/2 large onion
3 stalks celery
3 carrots

Mix veggies with chopped chicken breasts, stir into soup mixture.

Bake 1 roll prepared pizza crust for 8 minutes. Fill with chicken & veggies, add another crust for top crust, bake 13 minutes at 400 degrees F.

Red Hamburger Enchiladas
1 lb. hamburger
½ minced onion
4 c. grated cheese
2 doz. Corn tortillas
Sauce:
1 pkg. brown gravy mix
1 can tomato sauce
1 lg. can enchilada sauce

Serve with:

Refried beans
Salsa
More Grated cheese
Shredded Lettuce
Tomato
Sour Cream
Scrambled eggs (optional)

Process:

Brown Hamburger & minced onion
Make sauce
fry tortillas
roll hamburger mixture & cheese in tortillas, put in 9x13 foil pan
bag sauce in gallon Ziploc & put on top of rolled enchiladas
put bag of cheese in and cover with tinfoil
write directions on foil & freeze

Directions: Thaw, assemble by pouring sauce over, bake 350 for 30 min, top w/ cheese & bake 10 more minutes uncovered

OAMC Make with: Green chicken enchiladas, soft tacos

Green Chile Enchiladas
1 family size Cream of Chicken Soup
Sour Cream
½ Onion minced
Green chiles
1 lb cooked chicken breasts or turkey (chopped)
2 doz corn tortillas
2 c. Grated Cheddar Cheese


Serve with:

Refried Beans
Salsa
More Grated Cheese
Shredded Lettuce
Tomato


Process:

1. Boil Chicken Breasts in Broth

2. Chop Chicken

3. Saute Onion & Green Chile

4. Mix Chicken & Cheese

5. Fry 2 doz tortillas

6. Roll Chicken/Cheese Filling in Tortillas in 9x13 foil pan

7. Put any leftover chicken cheese along with minced onions, green chiles, sour cream & soup together in gallon Ziploc

8. Put bag of sauce flattened on top of rolled tortillas, add bag of grated cheese, cover with foil, Freeze.

Directions: Thaw, assemble by pouring sauce over, bake 350 for 30 min., top w/ cheese

Quiche
from BH&G New Cook Book - My Fave!!!

3 beaten eggs
1 1/2 cups milk
1/4 c. chopped green onion
1/4 tsp. salt
1/8 tsp. pepper
dash ground nutmeg
3/4 cup chopped cooked chicken, ham, etc.
1 1/2 cups shredded cheese (swiss, cheddar, jack, or havarti - 6 oz.)
1 T. all-purpose flour

Preheat oven according to package instructions, prepare pastry crust (I use ready crust that comes in a roll or else a regular freezer pie crust). Bake crust as for 1 crust pie.

Meanwhile, in a bowl stir together eggs, milk, onion, salt, pepper, and nutmeg. Stir in cooked meat. Toss together grated cheese and flour. Add to egg mixture; mix well.

Pour egg mixture into hot pastry shell. Bake in 325 degree oven for 35 to 40 minutes or till a knife inserted near the center comes out clean. If necessary, cover edge of crust with foil to prevent over browning. Let stand for 10 minutes. Serves 6.

Other great quiche combinations: cheddar, green chile, onion & sausage; swiss, onion, spinach & bacon; ham & cheddar; mushroom, cheddar, bacon; anything that sounds good to you. (Saute the veggies/ cook the meat, before adding so that most of the liquid is out of them.)

Mexican Rice Casserole
2 Tbsp. shortening
1 onion, diced
1/4 tsp. garlic salt
1 lb. hamburger
4 tsp. salt
1 Tbsp. sugar
1 Tbsp. chili powder

Cook the preceding ingredients. Then add:

1 bay leaf
1/2 cup raw rice
2 1/4 c. tomato juice
1 c. water

Put bay leaf in bottom of greased casserole dish. Layer hamburger mixture and rice. Pour tomato juice and water over. Bake covered 1 hour at 350 degrees F. Can cook up to 2 hours, but must add more water.

Christmas Potatoes or Funeral Potatoes (as needed)
Large bag frozen hash browns or potatoes O'brien
1 onion minced and sauteed in butter
1 carton sour cream
1 can Cream of Chicken Soup
2 cups grated Cheddar cheese
1 cube margarine or butter

Sautee onions in large pan with butter, add sour cream, and soup. Heat and pour, (into 9 x 13 pan that has been sprayed with Pam) over hash browns, toss with cheese. Cover and Bake for 1 to 1 1/2 hours at 350 degrees. Uncover, and top with more cheese and bake another 10 minutes. Fabulous with ham.
