Roasted Potatoes and Kielbasa
My latest favorite Sunday meal is wafting fabulous scents throughout my home as we speak! It is so fast and easy! A really great meal to toss together and leave with the oven timer set to start while you're gone.


6-8 potatoes
1 Kielbasa
1 onion
olive oil
salt
pepper
rosemary
parsley flakes

Wash and thinly slice (about 1/4 inch) 6 to 8 potatoes. I cut mine in half and then slice them so they don't roll all over. (You can peel them if you'd like, but since my family will eat the skins, I don't bother.)

Cut one Polska or Beef Kielbasa in half lengthwise. Then slice thinly.

Peel one onion. Cut in half. Slice thinly.

Toss onion, kielbasa, and potatoes with a drizzle of olive oil to coat potatoes. (I'm guessing I use about 3 Tablespoons.) Then toss in a tablespoon of kosher salt, grind in a bunch of pepper (I like to see it!), put in the leaves from a couple of sprigs of rosemary (we have a bush, but if you don't I'd guess about 2 tsp dried), and about 1 Tablespoon parsley flakes.

Pour into a 9x 13" baking dish that's been coated with cooking spray. Cover with foil, and bake for 1 hr. @ 400 degrees.

Hash
1 lb bacon
1 lb ground beef
1 onion, diced
vegetable oil
3 or 4 potatoes (can be raw, baked, or boiled - if raw, it's going to take longer to cook obviously) and with my big family I double the potatoes, but not the meat. So you could probably split the meat for another meal if your family is small. (Freeze half and use it in quiche or easy bisquick pie or breakfast burritos. Of course no man is ever going to complain about too much meat.)

Directions:
Chop bacon into small pieces (I like to do it while it's frozen, I just cut the whole pound into 1/2 inch wide pieces) and cook until crisp, remove and drain on paper towel. Remove most of the bacon grease and set aside, leaving a Tablespoon or two, saute onion. Add ground beef and brown or reheat. Remove to bowl with bacon bits. Add diced potatoes, add more bacon grease or vegetable oil, heat oil, then cook or reheat potatoes. When potatoes are cooked or heated, toss the bacon, ground beef, and onion back in to warm. Salt and pepper to taste! Delicious!!!

A man pleasin' meal. Serve by itself or, even better, with scrambled eggs, and toast. I always have to have ketchup on mine.

My grandma used to say that if your husband was going to be home and you hadn't started dinner yet, throw some onion and bacon in a pan. It will smell so good that they will wait without complaint. That's how we end up having this most of the time!

Au Gratin Potatoes
7-8 medium potatoes, boiled, peeled and diced (red potatoes are best, don't overcook!)

Mix all together and add potatoes to:
1 pt. sour cream
2 cans cream of chicken soup
1 1/2 cup cheese, grated
1/2 cup margarine, melted

Topping:
1/3 cup cornflake crumbs
2 Tbsp. melted butter
mix and sprinkle on top of potatoes.

Bake at 350 for 45 minutes.

Scalloped Potatoes
5-6 white potatoes
1 can cream of chicken soup
1 1/2 cup sharp cheddar
garlic salt and pepper
1/4 cup melted butter
1 pt. sour cream
1/2 c. chopped green onion

Cook (boil) and then quarter potatoes, peel and cut up. Mix together remaining ingredients and put in casserole dish. Bake at 350 for 45 minutes to 1 hour.

Twice Baked Potatoes
Start with baked potatoes, cut them all in half, then scoop out the insides leaving about 1/4 inch attatched to the peel. Set the skins on a cookie sheet until ready to refill.

Take potato guts and mash and season them as in mashed potatoes adding sour cream and grated cheddar cheese, some chives and garlic powder add zip. Variation, mix the guts with all the fixin's for Christmas Potatoes (Yum!) To make them lower in fat you can leave out some or all of the milk, butter, sour cream, and cheese and use chicken broth (but they won't taste nearly as good as mine.) Crumbled bacon would be good here. Don't forget to season with salt and pepper until they taste fabulous.

When your filling is to your liking, scoop back into potato-skin shell, sprinkle with grated cheese and bits of bacon. Freeze on a cookie sheet overnight and transfer to Gallon Freezer bags or bake immediately at 350 degrees farenheit until filling is warmed and cheese is melted.

Mashed Potatoes
My Way - Peel and chop up potatoes (pieces should be about 1 inch cubes - larger or smaller is fine, just keep them even so that they cook evenly). Place in pot and cover with water. Bring to a boil and boil softly for 20 minutes or until potatoes are tender.

Drain water from potatoes, start mashing with a masher, add some butter (for 5 lbs. I add a cube, maybe more) and milk (for 5 lbs. I start with about 2 cups - microwaved so it doesn't cool the potatoes too much), and continue mashing until they are the texture you like, add salt and pepper to taste.

(You can use evaporated milk, cream, and/or sour cream too. You can add minced garlic, finely chopped parsley, grated cheese, etc. if you're feeling adventurous.)

Baked Potatoes
Wash/scrub medium sized, well shaped potatoes. Remove any sprouting eyes, nasty gashes or grody spots with a paring knife. Poke each potato several times (like 6) with a paring knife or a fork (to let the steam out, I didn't once and one actually exploded all over my oven). You can wrap each potato in a square of tinfoil or rub them with oil and kosher salt, or you can just stick them in the oven naked (the potatoes, not you).

Bake for 1 hour at 400 degrees farenheit. If they're small, 45 min. might be enough. You know they're done when a fork will go through easily.

Potato Soup
1 onion, diced
2 cloves garlic, minced
2 or 3 carrots, diced
2 stalks celery, diced
5 or 6 potatoes, chopped
4 cups chicken stock
salt and pepper, to taste

Saute 1 diced onion and 2 chopped cloves garlic in 3 T. butter, add diced carrots and celery. Pour in 4 cups chicken broth, and diced potatoes. Cook over medium heat until potatoes are tender, salt and pepper to taste. Add 1 can corn, grated cheese, bacon bits, etc. as desired.

Christmas Potatoes or Funeral Potatoes (as needed)
Large bag frozen hash browns or potatoes O'brien
1 onion minced and sauteed in butter
1 carton sour cream
1 can Cream of Chicken Soup
2 cups grated Cheddar cheese
1 cube margarine or butter

Sautee onions in large pan with butter, add sour cream, and soup. Heat and pour, (into 9 x 13 pan that has been sprayed with Pam) over hash browns, toss with cheese. Cover and Bake for 1 to 1 1/2 hours at 350 degrees. Uncover, and top with more cheese and bake another 10 minutes. Fabulous with ham.
