Buttermilk Syrup for a Crowd (original recipe x 20)


Split and use 2 giant pots

20 cups sugar (10 lbs)
10 cups buttermilk (1/2 gal + 2 cups)
10 cups butter (5 lbs butter)
10 tsp baking soda (3 Tbsp + 1 tsp.)
20 Tbsp white Karo (1 ¼ cup)
Mix well, boil 5 minutes, stirring constantly.

Remove from heat and add:
20 tsp. vanilla (almost ½ cup)

How many pancakes do you need for 150 people? 3 big bags of Krusteaz
No time for homemade syrup? buy 2 costco sized bottles of syrup

Egg, Cheese, and Ham Sandwiches from Marlene Bartlett

Plan 1 egg, 1 muffin, 1 slice cheese, and 1 thick slice ham or canadian bacon per person, multiply accordingly - this recipe is for 25 eggs.

Prepare egg mixture (the night before, unless you want to wake up earlier):
Crack eggs into container or bowl, add salt, pepper, and milk (for every 25 eggs, add ½ t. salt and some pepper, plus 1 ½ cups milk). (Set aside some eggs for lactose intolerant sister). Whisk the egg mixture together then store in fridge. (We used the pitchers with covers to store it in. It made pouring in the muffin tins really easy in the morning.)

Schedule for girl's camp (feeding 150 girls by 7 am):
5 am -Turn on ovens 375.
English muffins – slice, lay flat on pans, and lightly brown in oven. Or butter, and brown on griddle.
Prepare roasters for warming to keep things warm.
Remove prepared egg mixture from fridge.
Prepare muffin tins by spraying with oil.
Make fruit and veg. trays, or fruit salad, and return to fridge.
5:30 am – pour eggs into muffin tins about ¼ inch full, put into ovens and watch, for approx.. 8 minutes.
Start heating ham slices in microwave on paper towel covered plate, with paper towel on top.
6 am – begin sandwich assembly, add cheese slice, wrap in foil squares. Keep gf sandwich/ df sandwich separate.
Put sandwiches in roaster pans, or warm ice chest, to keep warm.
Set out fruit salad, yogurt, toppings, veggie tray, drinks, etc.
7 am – Breakfast is served.

Biscuit Pockets
Preheat oven to 400 degrees.

2 rolls of refrigerator biscuits (10 per roll)
1/2 lb. sausage, browned
5 slices American Cheese (torn in quarters)

Flatten biscuits and stretch out. Top with cheese, sausage, & cheese. Stretch a second biscuit to top each one and crimp with a fork. Cut a tiny slit in top of each pocket.


Bake in 400 degree oven for 12-15 minutes


Variations: Spaghetti sauce, mozarella, and pepperoni. Chicken chunks, cream cheese, chives. Ham and Swiss. Cream cheese, green olives, minced onion. Hotdogs and cheese. Bacon, scrambled eggs, cheese. PB&J?

One last suggestion that I'm curious to try from Lea & Perrins:

1/4 cup peanut butter, 2 strips crisp bacon - crumbled, 2 tsp Worcestershire sauce, 2 tsp. instant minced onion. Hmmmmm. Could be really good or really gross.

German Pancake - kind of.

4 T. butter

1 cup flour
1 tsp salt
1 tsp baking soda
1/2 tsp cinnamon
1/2 tsp nutmeg
1/4 cup sugar

5 eggs
1 cup buttermilk or milk with 1 T. Vinegar added to sour it
1 tsp vanilla

Melt the butter in a cast iron skillet (or other ovenproof pan) while oven is preheating to 400 degrees.
Mix flour, salt, soda, cinnamon, nutmeg, and sugar. Add Eggs, buttermilk, and vanilla. Mix well. Pour into hot skillet when butter starts to bubble. Bake for 20 minutes at 400 degrees.

Serve topped with Apple Pie Filling and we poured a puddle of cream and then sprinkled it with sugar. Soooo, yummy.

It would really be good savory too - leave out the nutmeg, cinnamon, & vanilla - top with sauteed veggies and grated cheese. Oooh, or add some dill, sauteed minced onion, cheddar. I'm thinking this would be great with topped with sauteed onions, green chiles, and sausage, add a packet of brown gravy mix and 1 cup of water, bring to a boil, pour over. Oh, Now I have to go cook!

And for sticklers - here's the real recipe that I distorted...

German Pancakes from Donna Williams, My old friend Sharla Williams' Mom

1 cube butter
1 c. milk
1/2 c. white flour plus 1/2 c. wheat flour
4 eggs
cinnamon, nutmeg

Melt 1 Tbsp. buttter in 6 pie tins in oven while pre-heating to 400 degrees. When butter sizzles, add 1/2 cup batter to each pan. Bake approximately 10-12 minutes til puffy and golden. Serve with:
honey & lemon juice
fried apples spiced with cinnamon & nutmeg
sliced peaches, strawberries, pineapple, bananas, & whipped cream (for dessert)

Carrie's Breakfast Cake
from Carrie Keiser

Cream:
1/2 Cup Butter (I've used shortening and it still tastes good)
1 Cup brown sugar
2 eggs (According to my mom and 2 of my brothers the eggs are optional. I have never made it with out, but they swear they have never made it with them!)

Blend in:
1 Cup milk

Add:
2 3/4 Cups flour
3 teaspoons baking powder
1 teaspoon salt

Mix well and spread in 9x13 cake pan. Batter is thick.

Topping:
1/2 Cup sugar
1/2 Cup flour
1 Tablespoon cinnamon
1/4 Cup butter (no subbing)

Blend with a "muncher", or a fork or cut with2 knives, whatever you have!
Sprinkle over the cake and bake @ 375 for 25 mins. wonderful alone or with a bowl of oatmeal. Works for dinner too! :)

Aebelskievers from Linda Neil
2 cups flour
2 cups buttermilk
1 tsp baking soda
3 eggs, separated
1/2 tsp. salt

Combine all ingredients except egg whites! Beat egg whites separately and fold into batter.
In Aebelskiever pan, well oiled (it's handy to keep a bowl of oil and a pastry brush nearby to reapply frequently) pour a small amount of batter into each cup (fill a little less than full), with two forks (or knitting needles) carefully turn each pancake about 1/4 turn, go around again and turn each another quarter turn, until you have hollow pancake balls! Buttermilk Syrup (from Linda Neil)

1 tsp. vanilla (add after cooking other stuff)

Mix all ingredients together (except vanilla) in a Medium sized pot (it bubbles and boils - leave room!, When I double it, I use my big bean pot.) Bring to a boil over medium heat, stirring continually, let boil for 5 minutes, remove from heat and add vanilla, mix well.

Awesome on Aebelskievers, Pancakes, Waffles, ice cream, fresh apple cake, dirt, anything.

Crustless Quiche or Impossibly Easy Green Chile Pie

Cook and crumble 1 lb sausage, remove from pan and drain grease except for about 1 tablespoon, in sausage grease saute 1 onion, when onion is transparent and almost carmelized add 1 (8 oz can) diced green chiles.

(You can also use cubed ham, bacon, taco meat, diced chicken, etc. and substitute any veggies you like: mushrooms (saute first), broccoli (steamed first), mixed vegetables) Go to Betty Crocker dot com for over 200 variations.

Pour meat/veggie mixture into greased 9 inch pie plate.

Mix 1/2 cup bisquick
1 cup milk
1/4 to 1/2 tsp salt (depending on the saltiness of your meat)
1/8 tsp pepper
2 eggs
and 1 cup grated cheese

Pour over meat mixture.
Bake at 400 degrees for 35 to 40 minutes (until knife inserted comes out clean). Cool 5 minutes before serving.

Sausage Gravy
1 lb. hot sausage or bacon/sausage, cooked and crumbled and set aside (save grease)

Make a roux by mixing/melting butter, grease, and flour over medium heat:

8 Tbsp. butter
2 Tbsp. reserved sausage grease (call it drippings if it makes you feel better about it- you can leave it out, but it won't taste as good.)
10 Tbsp. flour

Slowly add 4 cups milk while stirring constantly, so you don't get lumps.
Cook over medium heat, add salt, pepper, and garlic salt to taste (I'd guess 1/2 to 1 tsp of each, take it slow and test along the way.) Add drained sausage.

Since I don't usually use a recipe my gravy comes out different every time. With our large family I make 4 cups of gravy. If that is too much for you, you can certainly halve the recipe, but you can also pour any leftover into a freezer bag or container and freeze it. With a roll of biscuits and some scrambled eggs, you can have a meal ready in minutes!

Quiche
from BH&G New Cook Book - My Fave!!!

3 beaten eggs
1 1/2 cups milk
1/4 c. chopped green onion
1/4 tsp. salt
1/8 tsp. pepper
dash ground nutmeg
3/4 cup chopped cooked chicken, ham, etc.
1 1/2 cups shredded cheese (swiss, cheddar, jack, or havarti - 6 oz.)
1 T. all-purpose flour

Preheat oven according to package instructions, prepare pastry crust (I use ready crust that comes in a roll or else a regular freezer pie crust). Bake crust as for 1 crust pie.

Meanwhile, in a bowl stir together eggs, milk, onion, salt, pepper, and nutmeg. Stir in cooked meat. Toss together grated cheese and flour. Add to egg mixture; mix well.

Pour egg mixture into hot pastry shell. Bake in 325 degree oven for 35 to 40 minutes or till a knife inserted near the center comes out clean. If necessary, cover edge of crust with foil to prevent over browning. Let stand for 10 minutes. Serves 6.

Other great quiche combinations: cheddar, green chile, onion & sausage; swiss, onion, spinach & bacon; ham & cheddar; mushroom, cheddar, bacon; anything that sounds good to you. (Saute the veggies/ cook the meat, before adding so that most of the liquid is out of them.)
