More Once A Month Cooking!



Yesterday, I purchased, prepped, and froze meals for the next month. (I know it sounds intimidating, but it probably won't once you read the menus.) I usually try to do the prep work on the day I do my grocery shopping - I brown and freeze any ground beef, or saute, chop up, and freeze chicken breasts that will later go into recipes. That way, whether it's me, the hubby, or kids who cook, half the meal is already done to toss into a dish.

So, what can you whip up in 20 minutes or under if you've got the meat already frozen?

Tacos
Taco salad
Burritos
Hamburger helper
Spaghetti
Gravy with Hamburger or Sausage
Stir Fry
Chicken Packets
Spanish Rice
Layered Enchiladas
Linguine Alfredo with chicken
Fried potatoes with Hamburger
and a bunch more I can't think of right now

Here are my menus for the next month, for your viewing pleasure, and for me to refer to (just in case the list on the front of the fridge mysteriously disappears):

9/13 - 9/19
M- bread pudding (frozen in aluminum lasagne pan) with buttermilk syrup (which would make dirt taste delicious)
T- "ham" salad sandwiches
W- corn dog muffins
Th- spaghetti
F- Mexican Rice Casserole (I also love Rice-A-Roni Spanish Rice, add precooked/frozen ground beef - gotta double it for my family)
Sat- stir fry chicken (bag o' frozen stir fry veggies, chicken is precooked, chopped and frozen, minute rice)
Sun- lasagne (all prepared and frozen in aluminum lasagne pan with directions to thaw and bake written on tinfoil cover)

9/20-9/26
M- biscuits and sausage gravy (sausage is cooked, and frozen in gladware. McCormick mix is delish if you don't do homemade.)
T- beanie weenie (I'm lovin' Bush's baked beans, toss in after frying some hotdog coins, add a little extra brown sugar)
W- chicken packets (chicken filling is cooked, chopped, doctored, and frozen in gladware)
Th- ravioli (frozen bag of premade stuff, add can of sauce and precooked frozen ground beef)
F- Rhodes dough pizzas (defrost loafs of Rhodes in the morning, quick homemade pizza that evening)
Sat- tostadas
Sun- chicken ranch pasta (crockpot in the morning, ready when you get home from church!)

9/27-10/3
M- hamburgers & fries (yes, I bought the premade, frozen patties and a bag o' fries to bake while I'm frying them)
T- ham sandwiches (mixed, filled, and frozen in tinfoil, just toss in the oven for 20 minutes)
W- Kielbasa and Potatoes (kielbasa chopped and frozen in gladware)
Th- enchiladas (frozen in aluminum lasagne pan, just add sauce and bake)
F- pancakes
Sat- soft tacos (hamburger cooked and frozen in gladware, tortillas soft fried, and frozen in a gallon bag)
Sun- quiche (frozen pie crusts; bacon, onions, etc. frozen - no thawing required, but I precook my crust about 5 minutes before adding eggy mixture and filling)

10/4- 10/10
M- fried potatoes with bacon & onions (bacon is chopped, cooked, and frozen with onions - just chop potatoes, saute them til tender, and toss in meat)
T- Easy Crustless Quiche (precooked sausage, add green chile and onion)
W- penne pasta lasagne (I had a bunch of lasagne filling left, so I cooked up some penne, tossed it in the cheesy filling, put it in a baking dish, and poured on the rest of the can of sauce. Can't be too bad, right?)
Th - baked potatoes with hamburger gravy
F - homemade Mac & Cheese
Sat - Time to Go Shopping and Cook Again. I'm going out to eat.

Everything for these meals is either in the pantry, fridge, or freezer. I like to package and freeze parts together, so they don't accidentally get eaten before their time. (For example, if you were having french bread pizzas, you could wrap your container of homemade meat sauce, bag of mozarella, package of pepperoni, and loaf of french bread together in saran wrap, before you stick it in the freezer. Get the package out the night before, defrost in the fridge, and you're all set to whip it up in about 15 minutes!)

By the way, I spent about an hour at Walmart, after I made up a list of meals in the parking lot. I spent about $200 (and that included milk, bread, cereal and some other necessities, but not a bunch of snacks or anything). My goal is to spend about $1 per meal, per person. The prep work (cooking the meat - hamburger and chicken, assembling lasagne, ham sandwiches, enchiladas, and making filling for chicken packets, etc.) took about three hours. (And just in case you're wondering, I figure I spend about $400 per month on food for 7 people (5 adult/teen, 2 picky littles. Also, I do have a separate full-sized freezer, but I think I could probably keep all the prepared stuff in the kitchen freezer, as long as I didn't have a bunch of other junk in there.) Another tip: I keep a list of the stuff I have prepped in the freezer, on the front of the freezer, so we don't forget to use it.

I also did laundry while I was doing my cooking. I didn't fold, just moved loads through the washer/dryer to the couch. By Saturday night we were ready for our "Laundry Party!" (which makes little kids beg to be allowed to come, and big kids groan). At our "Laundry Party!" we turn on fun music, and everyone sits in special spot of their choosing (just like Christmas morning!), while I throw laundry off the pile at the owner, and they fold their stuff. Each of the big kids usually has to do their own and a small sibling, while little kids fold dishtowels, and little things. I do mine and DH does his own. Whoever isn't busy (because all their laundry is still on their floor) gets to do towels, sheets, or whatever I throw at them.

Oh, By the way, I don't do the cooking most nights. The kids (16, 13, 11) are still doing it. They just go by the chore chart as to when their cooking day is, then they make the meal on the menu calendar. Yup, life is good.

Turkey Pot Pie
Preheat oven to 400 degrees F. Thaw two deep dish pie crusts and poke with fork. Bake pie crusts as directed on package for 1 crust pie.

While they're baking, mix:

1 2/3 cups hot water
1 package (6 oz.) Stove Top Stuffing Mix
3 T. butter or margarine
(can add sauteed minced onion and celery too - yum!)

Stir just until moistened. Set aside.

Combine:
4 cups chopped cooked turkey
1 bag (16 oz.) frozen mixed veggies or broccoli
1 can (10 3/4 oz) condensed Cream of Chicken or Cream of Mushroom soup (you can just use leftover gravy too)
3/4 cup milk
1 1/2 cups shredded cheddar cheese (with mushroom or gravy, I leave out the cheese)

Pour Turkey/Veggie mixture into pie crusts, top with stuffing. Turn oven down to 350, and bake 30 minutes or until heated through.

Soooooo delicious - the kids could not get enough of it and had the leftovers for breakfast!

*If you don't have pie crusts, or want to save some calories, just spray a 9x13" casserole and pour the turkey mix in, then top with stuffing mix and bake 30 min at 350.


To Freeze ahead for Once a Month Cooking: prepare soup/turkey/veggie mix. Freeze in two Ziploc containers or 1 gallon freezer bags with the package of frozen pie crusts. Be sure to have your box of dressing in the pantry. On the day of serving, thaw turkey mix in fridge or microwave to soften, and continue as directed.

Oh, I just realized that a layer of mashed potatoes, turkey, layer of cheese, layer of veggies, layer of gravy/soup, layer of stuffing...then bake, would be just heavenly. (Is the word layer starting to look weird to you too?) Yeah, I don't generally love shepherd's pie, but still...it's all about the contents and proportions. Right?

Balkan Meatballs from OAMC by Wilson & Lagerborg
1 egg
1/4 cup Milk
1/3 cup crushed seasoned croutons
3/4 teaspoon salt
3/4 teaspoon sugar
1/4 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/4 teaspoon ground allspice
1 pound lean ground beef
1/2 pound ground turkey
1 tablespoon minced onion

1 8-ounce package wide egg noodles

White Sauce

2 tablespoons margarine
1/4 cup all-purpose flour
2 cups milk
parsley for garnish

In a medium-size mixing bowl, beat egg with milk. Mix in the crushed croutons, salt, sugar, and spices. Add ground beef, ground turkey, and onion; mix thoroughly. Preheat oven to broil and/or 550 degrees F. shape meat mixture into meatballs the size of walnuts. Place meatballs on a rimmed cookie sheet; broil until lightly browned, about 5 minutes. Cool; put meatballs in a 1-gallon bag, and freeze them.

To prepare for serving,, thaw meatballs. Cook noodles according to package directions. At the same time, make White Sauce in a large skillet. melt margarine over low heat. Add flour, stirring constantly until mixture is smooth and bubbly. Gradually stir in milk. Heat to boiling over medium heat, stirring constantly. Boil and stir 1 minute until thick and smooth.

Add meatballs to sauce. Bring to a boil; reduce heat. Cover pan, simmer 15 minutes, stirring occasionally. Serve meatballs and sauce over wide egg noodles. Chop parsley, sprinkle over top.

Makes 4 servings.

Ham & Cheese Freeze-Ahead Sandwiches
Jan's Sandwiches (Janie's Version) original recipe from Once A Month Cooking by
Mimi Wilson and MaryBeth Lagerborg

1 (2 1/2 ounce) package thin-sliced, corned beef luncheon meat
1 (8 oz) jar cheez whiz
1 T. minced onion
2 T. light mayonnaise
8 sandwich or onion rolls

*(okay, corned beef is just gross, so I used one of those glad-ware packaged Hillshire Farms Thin Sliced Deli Style Honey Ham and it made enough for 2 packages of rolls, plus I used about half, maybe more of a large cheez whiz, and the cheez whiz has so much fat in it, why bother with light mayo? so I went whole-hog and had the real stuff)

Chop meat and mix with Cheez Whiz, onion, and mayonnaise. Spread filling on one bun; top with second bun. Wrap buns individually in foil and freeze in their original bread bag.

To prepare for serving: thaw rolls and bake in foil in a preheated 350 degree F oven for 20 minutes. *(Note: I didn't bother thawing, and they worked just fine. Also, write the cooking instructions on the plastic bag with a permanent marker, so you don't have to find the recipe when you are ready to cook these babies. BTW, they were delicious and tasted very much like an Arby's Ham & Cheese.)

Chicken Packets
Chicken Packets from Once A Month Cooking by Mimi Wilson and Mary Beth Lagerborg

2 cups cooked, chopped chicken
1 3-ounce package cream cheese, softened
1 tablespoon chopped chives
2 tablespoons milk
salt to taste
1/2 cup crushed, seasoned crouton crumbs
2 packages refrigerated crescent rolls
1/4 cup melted margarine

Mix chicken, cream cheese, chives, milk, and salt in a medium bowl (mixing with hands works best) to make filling and store in a 1-quart freezer bag. Put crouton crumbs in another 1-quart bag. attach it to bag of chicken filling and freeze them. Refrigerate crescent rolls.

To prepare for serving, thaw chicken mixture. Unroll crescent rolls. Each tube will contain 4 rectangles of dough with a diagonal perforation. Press dough along each perforation so that the rectangle halves will not separate. Plae about 1/4 cup of the chicken mixture into the center of each rectangle. Fold dough over filling, and pinch the edges to seal tightly. Dip each packet in melted margarine and coat with crouton crumbs. Place packets on a baking sheet. Bake in a preheated 350 degree F oven for 20 minutes or until golden brown. Packets are good either hot or cold.

*I made mine with Grands refrigerated biscuits rolled out. I put filling on the center of one topped it with another, and crimped the sides closed all the way around. I also added some mozarella cheese inside and sprinkled with cheese, garlic salt, and parmesean before baking. I did it with refrigerated rolls of pizza dough too (with the cheese, garlic salt, parmesean, etc. and made a large roll without the hassle of pressing those perforations the crescent rolls have). Every way I tried it these were fabulous!!!

Au Gratin Potatoes
7-8 medium potatoes, boiled, peeled and diced (red potatoes are best, don't overcook!)

Mix all together and add potatoes to:
1 pt. sour cream
2 cans cream of chicken soup
1 1/2 cup cheese, grated
1/2 cup margarine, melted

Topping:
1/3 cup cornflake crumbs
2 Tbsp. melted butter
mix and sprinkle on top of potatoes.

Bake at 350 for 45 minutes.

Scalloped Potatoes
5-6 white potatoes
1 can cream of chicken soup
1 1/2 cup sharp cheddar
garlic salt and pepper
1/4 cup melted butter
1 pt. sour cream
1/2 c. chopped green onion

Cook (boil) and then quarter potatoes, peel and cut up. Mix together remaining ingredients and put in casserole dish. Bake at 350 for 45 minutes to 1 hour.

Twice Baked Potatoes
Start with baked potatoes, cut them all in half, then scoop out the insides leaving about 1/4 inch attatched to the peel. Set the skins on a cookie sheet until ready to refill.

Take potato guts and mash and season them as in mashed potatoes adding sour cream and grated cheddar cheese, some chives and garlic powder add zip. Variation, mix the guts with all the fixin's for Christmas Potatoes (Yum!) To make them lower in fat you can leave out some or all of the milk, butter, sour cream, and cheese and use chicken broth (but they won't taste nearly as good as mine.) Crumbled bacon would be good here. Don't forget to season with salt and pepper until they taste fabulous.

When your filling is to your liking, scoop back into potato-skin shell, sprinkle with grated cheese and bits of bacon. Freeze on a cookie sheet overnight and transfer to Gallon Freezer bags or bake immediately at 350 degrees farenheit until filling is warmed and cheese is melted.

Red Hamburger Enchiladas
1 lb. hamburger
½ minced onion
4 c. grated cheese
2 doz. Corn tortillas
Sauce:
1 pkg. brown gravy mix
1 can tomato sauce
1 lg. can enchilada sauce

Serve with:

Refried beans
Salsa
More Grated cheese
Shredded Lettuce
Tomato
Sour Cream
Scrambled eggs (optional)

Process:

Brown Hamburger & minced onion
Make sauce
fry tortillas
roll hamburger mixture & cheese in tortillas, put in 9x13 foil pan
bag sauce in gallon Ziploc & put on top of rolled enchiladas
put bag of cheese in and cover with tinfoil
write directions on foil & freeze

Directions: Thaw, assemble by pouring sauce over, bake 350 for 30 min, top w/ cheese & bake 10 more minutes uncovered

OAMC Make with: Green chicken enchiladas, soft tacos

Green Chile Enchiladas
1 family size Cream of Chicken Soup
Sour Cream
½ Onion minced
Green chiles
1 lb cooked chicken breasts or turkey (chopped)
2 doz corn tortillas
2 c. Grated Cheddar Cheese


Serve with:

Refried Beans
Salsa
More Grated Cheese
Shredded Lettuce
Tomato


Process:

1. Boil Chicken Breasts in Broth

2. Chop Chicken

3. Saute Onion & Green Chile

4. Mix Chicken & Cheese

5. Fry 2 doz tortillas

6. Roll Chicken/Cheese Filling in Tortillas in 9x13 foil pan

7. Put any leftover chicken cheese along with minced onions, green chiles, sour cream & soup together in gallon Ziploc

8. Put bag of sauce flattened on top of rolled tortillas, add bag of grated cheese, cover with foil, Freeze.

Directions: Thaw, assemble by pouring sauce over, bake 350 for 30 min., top w/ cheese

Crockpot Shredded Chicken
Make it into Burritos, Tacos & Tortilla Soup.

Put about 8 boneless/skinless chicken breasts in your crockpot with 1 jar of salsa, 1 onion chopped, 1 can diced tomatoes, 1 small can diced green chiles, and 1 can chicken broth. (If you're in a hurry, just add chicken and salsa - you can add the other stuff later when you make the soup). Cook about 5 hours on high. Fish out the chicken and Shred the chicken with 2 forks.

Tortilla Soup -
Put one or two breasts worth back into the pot with the soupy stuff and freeze in a gallon Ziploc (zip it and lay it flat, so it will thaw faster) or a large gladware container. Take out to thaw the night before you plan to serve it.

When you're ready to have tortilla soup just add 1 can corn, 1 can pinto beans, and 1 can black beans. I also like to add a can of refried beans for our big family, and sometimes it needs another can of tomatoes or chicken broth (to stretch it). Serve with Tortilla Chips and grated cheese. (With all the extra cans of goodness - it's enough for at least 2 meals for my family of 8).

Chicken Tacos -
For tacos just use the shredded meat in taco shells, instead of ground beef. Then decorate with grated cheese, shredded lettuce, chopped tomatoes, salsa, sour cream, etc. Make burritos with any leftover meat and freeze them for later!

Shredded Chicken Burritos -
Take 1 large tortilla, add refried beans (I warm a large can with about 1/4 cup water, 1/2 cup grated cheese, and 1/4 cup salsa), shredded chicken, and grated cheese. Then I roll them, and wrap them in tinfoil, stick them in a freezer ziploc and freeze. When you're ready to serve them, unwrap and microwave for 1 minute, turn over, and warm 1 minute more (maybe 2 depending on your microwave.) Of course, you can have them fresh too, then make up your leftovers into more burritos to freeze.

Sausage Gravy
1 lb. hot sausage or bacon/sausage, cooked and crumbled and set aside (save grease)

Make a roux by mixing/melting butter, grease, and flour over medium heat:

8 Tbsp. butter
2 Tbsp. reserved sausage grease (call it drippings if it makes you feel better about it- you can leave it out, but it won't taste as good.)
10 Tbsp. flour

Slowly add 4 cups milk while stirring constantly, so you don't get lumps.
Cook over medium heat, add salt, pepper, and garlic salt to taste (I'd guess 1/2 to 1 tsp of each, take it slow and test along the way.) Add drained sausage.

Since I don't usually use a recipe my gravy comes out different every time. With our large family I make 4 cups of gravy. If that is too much for you, you can certainly halve the recipe, but you can also pour any leftover into a freezer bag or container and freeze it. With a roll of biscuits and some scrambled eggs, you can have a meal ready in minutes!

Mexican Rice Casserole
2 Tbsp. shortening
1 onion, diced
1/4 tsp. garlic salt
1 lb. hamburger
4 tsp. salt
1 Tbsp. sugar
1 Tbsp. chili powder

Cook the preceding ingredients. Then add:

1 bay leaf
1/2 cup raw rice
2 1/4 c. tomato juice
1 c. water

Put bay leaf in bottom of greased casserole dish. Layer hamburger mixture and rice. Pour tomato juice and water over. Bake covered 1 hour at 350 degrees F. Can cook up to 2 hours, but must add more water.
