Pecan Pie Cookies from Denise Crawford

Here is the recipe to the Pecan Cookies I brought last night to RS.  It was a last day decision to make them so too late to send in the recipe.  Denise Crawford


INGREDIENTS

FOR CRUST:

  • 2 sticks unsalted butter, softened
  • 2/3 cup packed brown sugar
  • 2 2/3 cups all-purpose flour
  • 1/2 teaspoon salt

FOR TOPPING:

  • 1 stick (½ cup) unsalted butter
  • 1 cup packed light brown sugar
  • 1/3 cup honey
  • 2 tablespoons heavy cream
  • 2 cups chopped pecans

INSTRUCTIONS

Preheat the oven to 350ºF and line a 9x13-inch pan with foil, leaving enough for a 2-inch overhang on all sides.

First make the crust by creaming together the butter and brown sugar until fluffy in a stand mixer fitted with the paddle attachment. Add in the flour and salt and mix until crumbly.

Press the crust into the foil-lined pan and bake for 20 minutes until golden brown.

While the crust bakes, prepare the filling by combining the butter, brown sugar, honey and heavy cream in a saucepan and stirring it over medium heat. Simmer the mixture for 1 minute, then stir in the chopped pecans.

Remove the crust from the oven and immediately pour the pecan filling over the hot crust spreading it to cover the entire surface.

Return the pan to the oven and bake an additional 20 minutes.

Remove the pan and allow the bars to fully cool in the pan.

Use the foil overhang to lift out the bars and transfer them to a cutting board. Peel off the foil, slice into bars and serve.

My Favorite Chocolate Chip Cookies
1 c. shortening 6 c. flour
1 cup butter 2 tsp. salt
2 c. sugar 2 tsp. baking soda
1 cup brown sugar 12 oz. chocolate chips
4 tsp. vanilla 11 oz. butterscotch chips (have you noticed they're making the bags smaller!?!)
4 eggs

Cream together shortening, butter, sugars, and vanilla. Add eggs. Sift flour with salt and soda. Mix into creamed mixture, beat until blended. Stir in chips. Drop by spoonfuls onto cookie sheet. Bake in 350 degree oven for 8 minutes.

Loaded Oatmeal Cookies
1 c. butter 1 c. shredded coconut
2 eggs 1 c. chopped walnuts
1 tsp. vanilla 1 c. raisins
1 c. sugar 12 oz. chocoalte chips
1 c. brown sugar
2 c. flour
1/2 tsp. baking soda
1 1/2 c. quick oats
1 tsp. baking powder
1/2 tsp. salt

Cream butter, add sugars, eggs and vanilla. Add dry ingredients and mix well. Add the good stuff.

Bake at 375 degrees until done, about 8 -10 minutes. Makes about 6 dozen.

Magic Cookie Bars

1/2 c. margarine or butter
1 1/2 cup graham cracker crumbs or vanilla wafer crumbs
1 (14 oz) can Eagle Brand sweetened condensed milk
16 oz package chocolate chips
1 1/3 cup flaked coconut
1 cup chopped nuts

Preheat oven to 350 degrees F. in 13 x 9 inch pan. Melt butter in oven, sprinkle crumbs over butter. Pour Eagle Brand milk evenly over crumbs. Top evenly with remaining ingredients. Press down firmly. Bake 25 to 30 minutes. Cool before cutting.

No Bake Cookies
2 c. sugar
1/2 c. milk
1 stick margarine
3-4 Tbsp. cocoa

Put ingredients in a saucepan and bring to boil for 2 minutes.

Add:

1/2 c. peanut butter
3 1/2 c. oatmeal (quick cook)
1 tsp. vanilla
nuts (optional)

Mix and drop onto waxed paper and let set up. Great for kids to make.

Big, Fat, Chewy, Chocolate Chip Cookies

2 cups all-purpose flour
1/2 tsp. baking soda
1/2 tsp. salt
3/4 cup unsalted butter, melted
1 cup packed brown sugar
1/2 cup white sugar
1 Tbsp. vanilla extract
1 egg
1 egg yolk
2 cups chocolate chips (I use 1/2 white and 1/2 milk chocolate)
Preheat the oven to 325 degrees. Grease cookie sheets or line with parchment paper.
Sift together the flour, baking soda and salt; set aside.
In a medium bowl, cream together the melted butter, brown sugar and white sugar until well blended. Beat in the vanilla, egg and egg yolk until light and creamy. Mix in the sifted ingredients until just blended. Stir in the chocolate chips by hand using a wooden spoon. Drop cookie dough onto the prepared cookie sheets. Cookies should be about 3 inches apart.
Bake for 15-17 minutes (depending on size of cookie) in the preheated oven, or until the edges are lightly toasted. Cool on baking sheets for a few minutes before transferring to wire racks to cool completely.

Brer Rabbit Molasses Sugar Cookies
3/4 c. shortening
1 c. sugar
1/4 c. molasses
1 egg
2 tsp. baking soda
2 c. flour, sifted
1/2 tsp. cloves
1/2 tsp. ginger
1/2 tsp. salt
1 tsp. cinnamon

Soften shortening in microwave. Add sugar, molasses and egg. Beat well. Sift together flour and spices, add to first mixture. Mix well. Chill. Form into 1 inch balls and roll in granulated sugar. Bake on ungreased cookie sheet about 2 inches apart. Bake at 375 degrees for 5-7 minutes (do not overbake - the tops should barely start to crack, these aren't supposed to be hard old gingersnaps).

And one tip from me: Make all the balls at once and place on a cookie sheet. Freeze. Then pour them into a ziploc bag, toss your sugar in, and shake and bake. I keep the bag of frozen dough balls in the freezer and only use what I need. It's so nice to be able to bake a batch of warm cookies any time you have the urge.

Decorator Frosting

1 1/4 c. butter
2 lbs powdered sugar
scant (-1 T.) 1/4 cup milk (in other words 3 Tablespoons milk)
2 tsp. vanilla (or other flavoring as desired)

Great on Rolled Butter Cookies

Rolled Butter Cookies (The Best!!)


1 c. butter
1 c. sugar
1 egg
2 Tbsp. cream (milk)
1 tsp baking powder
1/2 tsp salt
1/2 tsp soda
1 tsp vanilla
3 c. sifted flour

Cream softened butter, gradually add sugar, cream well. Blend in egg, cream, baking powder, soda, salt and vanilla. Gradually add flour. Mix well. If necessary, chill. Roll out 1/3 at a time. Place on ungreased cookie sheet. Sprinkle with sugar, if desired. Bake at 400 degrees F. for 5-7 minutes.

Awesome with Decorator Frosting.
