German Pancake - kind of.

4 T. butter

1 cup flour
1 tsp salt
1 tsp baking soda
1/2 tsp cinnamon
1/2 tsp nutmeg
1/4 cup sugar

5 eggs
1 cup buttermilk or milk with 1 T. Vinegar added to sour it
1 tsp vanilla

Melt the butter in a cast iron skillet (or other ovenproof pan) while oven is preheating to 400 degrees.
Mix flour, salt, soda, cinnamon, nutmeg, and sugar. Add Eggs, buttermilk, and vanilla. Mix well. Pour into hot skillet when butter starts to bubble. Bake for 20 minutes at 400 degrees.

Serve topped with Apple Pie Filling and we poured a puddle of cream and then sprinkled it with sugar. Soooo, yummy.

It would really be good savory too - leave out the nutmeg, cinnamon, & vanilla - top with sauteed veggies and grated cheese. Oooh, or add some dill, sauteed minced onion, cheddar. I'm thinking this would be great with topped with sauteed onions, green chiles, and sausage, add a packet of brown gravy mix and 1 cup of water, bring to a boil, pour over. Oh, Now I have to go cook!

And for sticklers - here's the real recipe that I distorted...

German Pancakes from Donna Williams, My old friend Sharla Williams' Mom

1 cube butter
1 c. milk
1/2 c. white flour plus 1/2 c. wheat flour
4 eggs
cinnamon, nutmeg

Melt 1 Tbsp. buttter in 6 pie tins in oven while pre-heating to 400 degrees. When butter sizzles, add 1/2 cup batter to each pan. Bake approximately 10-12 minutes til puffy and golden. Serve with:
honey & lemon juice
fried apples spiced with cinnamon & nutmeg
sliced peaches, strawberries, pineapple, bananas, & whipped cream (for dessert)
