Aebelskievers from Linda Neil
2 cups flour
2 cups buttermilk
1 tsp baking soda
3 eggs, separated
1/2 tsp. salt

Combine all ingredients except egg whites! Beat egg whites separately and fold into batter.
In Aebelskiever pan, well oiled (it's handy to keep a bowl of oil and a pastry brush nearby to reapply frequently) pour a small amount of batter into each cup (fill a little less than full), with two forks (or knitting needles) carefully turn each pancake about 1/4 turn, go around again and turn each another quarter turn, until you have hollow pancake balls!
