Mashed Potatoes
My Way - Peel and chop up potatoes (pieces should be about 1 inch cubes - larger or smaller is fine, just keep them even so that they cook evenly). Place in pot and cover with water. Bring to a boil and boil softly for 20 minutes or until potatoes are tender.

Drain water from potatoes, start mashing with a masher, add some butter (for 5 lbs. I add a cube, maybe more) and milk (for 5 lbs. I start with about 2 cups - microwaved so it doesn't cool the potatoes too much), and continue mashing until they are the texture you like, add salt and pepper to taste.

(You can use evaporated milk, cream, and/or sour cream too. You can add minced garlic, finely chopped parsley, grated cheese, etc. if you're feeling adventurous.)
