Buttermilk Syrup for a Crowd (original recipe x 20)


Split and use 2 giant pots

20 cups sugar (10 lbs)
10 cups buttermilk (1/2 gal + 2 cups)
10 cups butter (5 lbs butter)
10 tsp baking soda (3 Tbsp + 1 tsp.)
20 Tbsp white Karo (1 ¼ cup)
Mix well, boil 5 minutes, stirring constantly.

Remove from heat and add:
20 tsp. vanilla (almost ½ cup)

Cilantro Lime Rice for 200
Cilantro Lime Rice Serves: 200

50 Cups rice, uncooked, long- grain white
1 Cups butter
2 Cups minced garlic
1 Pints lime juice
6 Gallons chicken broth
3 Gallons lime juice, fresh
2 Cups sugar
9 Cups cilantro, fresh chopped

Cook rice with butter, garlic, 1 pint lime juice, chicken broth, and water. Remove from heat and toss with lime juice, sugar, and cilantro mix.

Obviously you'll need to do smaller batches. My friend has a professional rice cooker and it can do batches of 20 cups. I would probably do it in 3 batches.

So for each batch: 20 cups cooked rice cooked in 2 gal chicken broth (or water with "Better than Bullion", 1 cup lime juice, and 1/2 cup minced garlic.
tossed with 6-8 cups lime juice, 1 cup sugar, and 3 cups chopped, fresh cilantro.

Cilantro Lime Rice Serves: 4
1 Cup rice, uncooked, long- grain white
1 Teaspoons butter
2 Teaspoons minced garlic
1 Tablespoons lime juice
15 Ounces chicken broth
1 Cups water
1 Tablespoons lime juice, fresh
2 Teaspoons sugar
3 Tablespoons cilantro, fresh chopped

Egg, Cheese, and Ham Sandwiches from Marlene Bartlett

Plan 1 egg, 1 muffin, 1 slice cheese, and 1 thick slice ham or canadian bacon per person, multiply accordingly - this recipe is for 25 eggs.

Prepare egg mixture (the night before, unless you want to wake up earlier):
Crack eggs into container or bowl, add salt, pepper, and milk (for every 25 eggs, add ½ t. salt and some pepper, plus 1 ½ cups milk). (Set aside some eggs for lactose intolerant sister). Whisk the egg mixture together then store in fridge. (We used the pitchers with covers to store it in. It made pouring in the muffin tins really easy in the morning.)

Schedule for girl's camp (feeding 150 girls by 7 am):
5 am -Turn on ovens 375.
English muffins – slice, lay flat on pans, and lightly brown in oven. Or butter, and brown on griddle.
Prepare roasters for warming to keep things warm.
Remove prepared egg mixture from fridge.
Prepare muffin tins by spraying with oil.
Make fruit and veg. trays, or fruit salad, and return to fridge.
5:30 am – pour eggs into muffin tins about ¼ inch full, put into ovens and watch, for approx.. 8 minutes.
Start heating ham slices in microwave on paper towel covered plate, with paper towel on top.
6 am – begin sandwich assembly, add cheese slice, wrap in foil squares. Keep gf sandwich/ df sandwich separate.
Put sandwiches in roaster pans, or warm ice chest, to keep warm.
Set out fruit salad, yogurt, toppings, veggie tray, drinks, etc.
7 am – Breakfast is served.

Big Batch Rice Krispie Treats

Prep time: 30 min.  Total time: 60 min.  Servings: 48

¾ cup butter (1 ½ sticks)
4 packages (10 oz each, about 160) jet puffed marshmallows
24 cups rice krispies cereal

multiply by 3 for 150 people

Or

9 sticks butter
12 – 10 oz mini marshmallow bags
64 cups rice ereal
6 giant pans
Foil or plastic wrap

Melt butter, melt marshmallows, add rice krispies, stir until well coated
Spread onto buttered foil sheets

Store no more than two days at room temp in airtight container
To freeze, place in layers separated by wax paper in airtight container. Freeze for up to 6 weeks, let stand at room temp for 15 min before serving.

Hawaiian Haystacks for 150 people

Chicken Gravy

6 lg (50 oz) cans cream of chicken soup
1 lg (50 oz) can broth
8 cans evap milk (15 oz each)
¾ large package Italian Seasoning Dressing mix (7.6 oz pkt, makes 1 gal dressing)
1/2 cup ranch dressing, powdered mix
30 lbs shredded chicken (save some for gf, make gf gravy)

Serve over:

20 lbs jasmine or basmati rice, cooked

Toppings:

1 #10 can olives
5 lbs. grated cheddar cheese
3 #10 cans mandarin oranges
2 bags shredded coconut
1 lg bag sliced almonds
5 #10, or 6 - 50oz cans cream of chicken
4 #10 cans pineapple tidbits
3 #10 cans Chinese noodles
Chopped bell peppers
Chopped tomatoes
1 gal. Sour cream

Chandra Hansen’s Pine Summit Mac & Cheese (for a crowd)

Serves 40 people (amounts in parenthesis are what the package size is – can reduce amounts for convenience, serves 30+)
Margarine ½ lb = 2 sticks or 1 cup
Flour 1 cup
Salt 2 tsp.
Pepper 1 tsp. = 40 grinds fresh
Garlic Salt 1 tsp.
Seasoned Salt 1 tsp.
Milk 10 cups (8 cups)
Velveeta 2 ½ lbs (2 lb)

Macaroni 2 ½ lbs (2 lbs) - cook 3 minutes less than directions on package

Melt margarine, whisk in flour to make a roux, whisk in milk, add salts and pepper, cubed velveeta cheese
Melt and mix it in. It will be runny. Pour over cooked pasta (cook 3 min less than directions). Bake covered 32-40 minutes in 350 degree oven.
Can cover with crumbs or crushed potato chips (uncover and brown at end).

Great for a potluck, girl's camp, or big family party!
