Roast and peel fresh long green chiles for best tasting results. Place a stick of cheddar or jack cheese inside each chile. Dip chile in flour and then in egg batter (beat egg whites stiff, fold in beaten egg yolks). Then fry gently until golden brown on both sides and egg is done.
Other method for batter: Beat egg whites stiff, fold in yolks and enough flour to make stiff batter. Dip chili in batter and fry same as before.
Both methods work beautifully and give almost the same results.
