Roasted Potatoes and Kielbasa
My latest favorite Sunday meal is wafting fabulous scents throughout my home as we speak! It is so fast and easy! A really great meal to toss together and leave with the oven timer set to start while you're gone.


6-8 potatoes
1 Kielbasa
1 onion
olive oil
salt
pepper
rosemary
parsley flakes

Wash and thinly slice (about 1/4 inch) 6 to 8 potatoes. I cut mine in half and then slice them so they don't roll all over. (You can peel them if you'd like, but since my family will eat the skins, I don't bother.)

Cut one Polska or Beef Kielbasa in half lengthwise. Then slice thinly.

Peel one onion. Cut in half. Slice thinly.

Toss onion, kielbasa, and potatoes with a drizzle of olive oil to coat potatoes. (I'm guessing I use about 3 Tablespoons.) Then toss in a tablespoon of kosher salt, grind in a bunch of pepper (I like to see it!), put in the leaves from a couple of sprigs of rosemary (we have a bush, but if you don't I'd guess about 2 tsp dried), and about 1 Tablespoon parsley flakes.

Pour into a 9x 13" baking dish that's been coated with cooking spray. Cover with foil, and bake for 1 hr. @ 400 degrees.
